Alison's Lactose Free Lasagna

I made some great lasagna today.



One of the things I have really missed is lasagna. I found soy cheese and soy yogurt and soy ice cream. But it has taken me a while to find a good non-dairy lasagna that actually tastes good. I made some before that was yucky. But this one turned out well!

I used non-boil lasagna noodles. I was skeptical, but they worked well.
I cooked ground turkey and seasoned it with Italian seasonings.
I grated carrots.
I chopped zuccini. Ben says I should have grated that too. He doesn't like vegetables. The carrots were too small to notice or pick out, and he says I should do that with other vegetables too.
I used one can of spaghetti sauce. I think I should have used two.
I used a whole block of soy mozzarella cheese. I probably could have used two.
And I used tofu in place of cottage cheese. I drained the water out of the tofu package. Then I used a fork to mash up the tofu. It worked great.

The picture Ben took with our new camera doesn't really do the lasagna justice. But it looks ok. And Ben got to play with the new camera.

Also, Ben calculated the calories in this: 252 per 3"x 3.25" serving.

I miss lasagna too. I can't find all the ingredients in Korea. But my visiting teacher brought us a frozen Stouffers' lasagna the other day just because she's wonderful and the girls and I just about died we were so happy. Audrey said, "Sister Furner sure knows the way to our hearts." You can guess that she probably heard someone say that.

I forgot to mention--my visiting teacher has access to the military base and all it's treasures (i.e. the commissary with food from the USA).

Also, your lasagna actually looks really good. Especially considering it's made with tofu. Nice job!

What can you not get there? Noodles?
